SNACKS ECO AMIGABLES: OPTIMIZAN INGREDIENTES BASADOS EN MOSCAS COMO ALIMENTO PARA MASCOTAS

Aportar una fórmula sostenible, saludable y ampliamente aceptada por perros y gatos es el objetivo de este proyecto que desarrollará la Facultad de Ciencias Veterinarias y Pecuarias de la Universidad de Chile. La mosca soldado negra será la protagonista de esta innovadora iniciativa que busca crear nuevos ingredientes a base de insectos con el propósito de producir snacks para mascotas y así disminuir la demanda de esta industria sobre ingredientes que también consumen los seres humanos.

La generación de snacks eco amigables y saludables para mascotas es el objetivo del proyecto Fondef IDeA I+D que se encuentran desarrollando académicos y académicas de la Facultad de Ciencias Veterinarias y Pecuarias de la Universidad de Chile. La iniciativa espera optimizar los procesos para generar ingredientes con bajo impacto ambiental y que sean nutritivos para los animales.

De acuerdo a la encuesta “El Chile que viene” realizada en febrero de este año, ocho de cada diez chilenos tienen al menos una mascota. El número promedio de mascotas aumentó de 2,3 en 2019 a 2,7 en 2022, siendo los perros y gatos los más presentes en los hogares. Por otra parte, un informe del Servicio Nacional del Consumidor [MOU1] desarrollado en 2021 identificó que el gasto promedio mensual de una familia en su mascota varía entre los $25.000 y $40.000, solo considerando la alimentación. La misma encuesta da cuenta, además, de una tendencia por elegir alimentos de alta gama y naturales.

En este contexto, con el fin de mejorar y generar nuevos ingredientes a base de insectos para la producción de alimento para mascotas, el pasado mes de noviembre se dio inicio al proyecto “Optimización sensorial y funcional de ingredientes alimentarios basados en insectos para desarrollar snacks funcionales y palatables para mascotas”. La iniciativa, financiada por Fondef IDeA I+D, está a cargo de la académica de la Facultad de Ciencias Veterinarias y Pecuarias, Carolina Valenzuela<span lang=”ES-CL” style=”font-family:"Arial",sans-serif”>, y tiene como fecha de término noviembre del 2024.

De acuerdo a la investigadora, el aumento en la elección de alimentos premium “ha generado una competencia con los ingredientes que también consumen los seres humanos”, agregando que los alimentos de origen animal se han descrito como los más dañinos para el medioambiente, ya que tienen un mayor impacto climático por la generación de gases de efecto invernadero, su huella de carbono y demanda de agua.

“La Organización de las Naciones Unidas para la Alimentación y la Agricultura (FAO) y otras organizaciones han señalado que es muy importante estudiar, investigar y desarrollar nuevos ingredientes que puedan, en un futuro, reemplazar a los de origen animal. Esa es la motivación de este proyecto”, afirmó la especialista.

Este desafío no es una tarea fácil. Según Valenzuela, los alimentos de origen animal tienen características difíciles de reemplazar, como la presencia de gran cantidad de proteínas biológicas de buena calidad, aminoácidos de alta biodisponibilidad, minerales orgánicos, entre otras, que no se pueden obtener de los vegetales. “Es por esto que la estrategia de utilizar insectos para la producción de ciertos alimentos ha tomado fuerza” explicó.

Una potencial alternativa

El uso de insectos como ingredientes alimentarios en nutrición de mascotas cada vez se propone como una alternativa más prometedora. Estos son utilizados principalmente para producir harina y aceite, siendo reconocidos como sustentables, saludables y nutritivos dentro de la diversa gama de opciones actualmente existentes. Sin embargo, aún deben mejorar algunas de sus características sensoriales para aumentar la aceptación por sus consumidores.

Se ha descrito que el aspecto de un insecto entero genera asco y repugnancia entre los seres humanos. Para la académica “las harinas tienen un olor bastante fuerte y desagradable”, mientras que el aceite tiene algunas características tecnológicas poco apropiadas para su utilización, como, por ejemplo, que es sólido a temperatura ambiente, lo que dificulta su incorporación en alimentos.

En este sentido, el proyecto “Optimización sensorial y funcional de ingredientes alimentarios basados en insectos para desarrollar snacks funcionales y palatables para mascotas” busca abarcar una mejora de todas esas propiedades “desagradables” con diferentes tecnologías utilizadas en la industria de alimentos para generar nuevos ingredientes en base a insectos.

Por último, con dichos ingredientes se desarrollará un snack húmedo con consistencia cremosa, palatable y funcional para las mascotas. “Nuestro objetivo es que sean altamente aceptados por perros y gatos, que se puedan utilizar para la futura generación de snacks y que sean de alta aceptabilidad para las mascotas”, destacó la académica.

Insectos: modelo de economía circular

En el mundo, los tres insectos más utilizados para hacer harina y aceite son el grillo doméstico, la larva de mosca soldado negra y las larvas de tenebrio molitor, detalló la académica. Agregó, asimismo, que “los insectos son un modelo espectacular de economía circular, ya que tienen un ciclo de vida extremadamente corto, se alimentan de desechos y además pueden generar ingredientes como harina y aceite, y la harina tiene características nutricionales muy parecidas a los ingredientes de origen animal”.

Finalmente, de acuerdo a la profesora Valenzuela, de todas las estrategias de reemplazo de los ingredientes de origen animal, esta es de las más prometedoras gracias a sus características nutricionales y por tener un muy bajo impacto ambiental. “Estas y otras características lo convierten en una opción viable y de un costo candidato a competir dentro de la industria de alimentos para mascotas”, finalizó la directora de esta innovadora iniciativa.
